Coconut Curry chicken

This coconut curry chicken is so delicious, I made it two nights in a row. This recipe is incredibly nourishing and was actually on the menu during a very in-depth Standard Process Liver Detox. Coconut milk, fresh garlic and onions sautéed in olive oil, so many superfood ingredients that make such a crave-worthy dish.

Recipe:

Chicken Thighs (1 1/2 to 2 lbs)

olive oil or ghee

1 yellow onion

1 bell pepper

1 TBSP curry powder (I used muchi curry)

1 tsp ginger

1/2 tsp ground corriander

1 can of coconut milk (full-fat)

salt and pepper to taste

cilantro

cashews

mango chunks

Side: Basmati rice cooked in bone broth
